Mozzarella Sticks
- 12 low-moisture part-skim mozzarella cheese sticks
- 1/2 cup all-purpose flour
- 2 large eggs (lightly beaten)
- 1 cup panko breadcrumbs
- 1/2 cup Italian seasoned breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper (freshly ground)

Unwrap all mozzarella sticks and arrange them in a single layer on a parchment-lined baking sheet or plate. Freeze for at least 30-60 minutes until firm.

Prepare three shallow dishes: Dish 1 with all-purpose flour seasoned with a pinch of salt and pepper, Dish 2 with whisked eggs mixed with a tablespoon of water or milk, and Dish 3 with panko breadcrumbs mixed with garlic powder, onion powder, dried Italian herbs, salt, and pepper.

Take the chilled mozzarella sticks from the freezer. Dredge each stick thoroughly in the flour, shaking off excess. Dip into the egg wash, letting excess drip. Then, roll in the seasoned breadcrumbs, pressing gently to ensure a full, even coating. Place back on the parchment-lined sheet.

For extra crispiness, repeat the egg wash and breadcrumb steps for each stick for a second coating.

Once all sticks are double-breaded, place the entire baking sheet back into the freezer. Freeze for at least 2 hours, or until completely solid.
