Baked Oatmeal
- 1/3 cup peanut butter (or allergy friendly sub)
- 3 cups mashed banana
- 1 cup milk (of choice or water)
- 1/4 cup pure maple syrup (or honey or agave)
- 2 tsp pure vanilla extract
- 3 cups rolled oats
- 1/2 cup cocoa powder (or chocolate protein powder)
- 1 tsp salt
- 1/2 cup chocolate chips ((optional))

Preheat the oven to 350°F (175°C).

Line or grease a 9x13 inch baking pan.

In a large bowl, whisk together the peanut butter, mashed banana, milk, maple syrup, and vanilla extract until smooth.

Add the rolled oats, cocoa powder, and salt. Stir until evenly combined.

Fold in the chocolate chips, if using.

Pour the batter into the prepared pan and smooth the top with a spatula.
