Delicious Honey Lime Chicken & Avocado Rice Stack Recipe

Ingredients

  • 1 lb chicken breasts (boneless, skinless)
  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
  • 1 cup rice (uncooked)
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

    In a bowl, whisk together honey, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes to absorb all those vibrant flavors.

    Prepare 1 cup of rice according to package directions. Once fluffy and tender, set aside to cool.
