Homemade Peanut Butter Chocolate Chip Granola Bars

Ingredients
Yields 16 servings
- 1/4 cup coconut oil
- 1/2 cup honey
- 1/2 cup packed brown sugar
- 1/2 cup peanut butter (I use natural.)
- 2 teaspoons vanilla extract
- 4 cups old fashioned oats
- 2 cups rice krispie cereal
- 1/4 cup miniature chocolate chips (more for topping, if desired)

In a large bowl, combine old fashioned oats and rice krisipie cereal. Set aside.

Grease a 9x13 pan and set aside.

In a large saucepan combine coconut oil, honey, and brown sugar. Heat over medium heat, stirring until sugar is dissolved.

Bring mixture to a boil and boil for 1-2 minutes, stirring constantly.

Remove from heat and stir in peanut butter and vanilla extract.

Stir liquid mixture into oat mixture. Stir well being sure everything is incorporated. This will cool a bit. Stir in chocolate chips.

Press into 9x13 pan. Add more chocolate chips to top, if desired.

Using a piece of waxed paper, press firmly on the mixture to create an even pan of bars.

Cool completely. Cut into bars and wrap in plastic wrap.
